Natural wheat bran

Whole wheat flour

Brown sugar

Directions
Step 1
Preheat oven to 400°F.
Step 2
Mix bran, flour, sugar, cinnamon and baking soda in a medium bowl.
Step 3
Mix flax meal and water in a larger bowl. Stir in oil, buttermilk and egg.
Step 4
Add blueberries to dry ingredients and lightly mix until coated.
Step 5
Add dry ingredients to wet ingredients. Stir until batter is wet but do not over mix.
Step 6
Measure batter into greased muffin tins using ¼ cup measure. Bake for 20 minutes or until toothpick inserted in centre comes out clean.
Tip: Make your own buttermilk by adding 1 tbsp of lemon juice or vinegar to 1 cup of milk.
